Apple Honey Substitute

Have you ever run out of honey and craved that sticky golden syrup? Ok its never happened to me but I came across this recipe during the pandemic and thought I would give it a try. This creates a delicious syrup that mimics honey and its easy to make. All you need is apples, lemon and sugar.

Start with 4 apples. Cut them into chunks so that it would be easier to puree them with 1 cup of water. Strain the puree and squeeze as much juice from the pulp. You should have about 2 cups of liquid.

Put the liquid into a saucepan and add 1 cup of sugar and 1 teaspoon of lemon juice. Bring the liquid to a boil and when it has started bubbling turn down to a gentle simmer. Keep boiling until the liquid has reduced by half. The liquid is ready when it starts getting thick and sticky. You can test it by taking a spoon and coating the back of it. Let the liquid cool and if it has the consistency of honey, it is ready.

Pour the liquid in a jar and store in the fridge. It can last quite a long time since it is full of sugars. Enjoy over pancakes or in a hot cup of tea!

Ingredients

  • 4 apples
  • 1 cup water
  • 1 cup sugar
  • 1 tsp lemon juice

Instructions

  1. Cut and puree the 4 apples with 1 cup of water.
  2. Strain the puree and squeeze out the juice.
  3. In a sauce pan, add the juice, sugar and lemon juice.
  4. Bring to a boil. Turn down to a gentle simmer once it has started bubbling.
  5. Boil the liquid until it has reduced by half.
  6. Transfer the “honey” to a jar and store in the fridge.
