Raw Chocolate Date, Pecan and Oat Bar

I’ve been cravings for dairy-free treats for everyone to enjoy. This recipe is great for making at parties for friends and family who can’t eat eggs, dairy or refined sugars. Its also very easy to make and exceptionally delicious to eat!

The main ingredients for this dish are raw pecans, rolled oats, cocoa powder, cashews, dates and coconut oil.

Begin by making the Oat Pecan crust. You will need 1 cup of rolled oats, 1/2 cup raw pecans, a pinch of salt, a dash of cinnamon and 1 tablespoons of coconut oil. The easiest way to melt the coconut oil is to set it in a bowl of hot water. The hot water is warm enough to melt the coconut oil.

In a blender, mix the pecans, oatmeal, cinnamon and salt until it is coarsely blended. When the coconut oil is melted, mix it with the pecan and oatmeal mixture. Pat this mixture into a 6 inch round cake pan. Set aside while you make the cashew mixture.

In a separate bowl, blend 2 cups of cashews that have been soaked overnight with 1 cup of dates. Add 1/4 tsp cinnamon, 1 tsp vanilla extract and 4 tablespoons of melted coconut. Add a pinch of salt and blend it all together until it is creamy. Take 1 cup of this mixture and set aside.

With the rest of the cashew cream, add the 1/3 cup date and 2 1/2 tsp of cocoa powder.

The last part is to assemble the bar. Add this chocolate layer on top of the oat layer. The last layer would be the cashew cream. Smooth everything out. Set the whole thing into a fridge for at least 4 hours to let the coconut oil set. Enjoy!!

Oat Pecan Crust

  • 1 cup rolled oats
  • 1/2 cup raw pecans
  • 1 dash of cinnamon (1/4 tsp)
  • 1 pinch of salt
  • 1 tbsp coconut oil, melted

Chocolate and Cashew Cream

  • 2 cups cashew, soaked for at least 8 hours or overnight
  • 1 tsp vanilla extract
  • 1 cup dates + 1/3 cup more dates
  • 4 tbsp coconut oil, melted
  • 1/4 tsp cinnamon
  • 2 1/2 tbsp cocoa powder
  • 1 pinch of salt
