I came across this recipe and thought it would be interesting to try. I was nervous because ketchup was not a typical cake flavour and I was worried it would be overwhelming. There was also mixed reviews for this cake.
Not wanting to have huge cake, I decided to make half the recipe. This way, if it didn’t work out, I wouldn’t feel as bad.
Start by beating 3/4 cup of butter with 1 1/2 cups of packed brown sugar. I used light brown sugar instead of the dark. Blend until the mixture get lighter in colour and the sugar is almost dissolved. Beat in 2 eggs, one at a time.
In a separate bowl, mix together 2 cups of flour, 2 tsp baking powder, 1 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp ground ginger and 1 tsp baking soda. In another small bowl, mix together 1/2 cup ketchup and 1/2 water. I added the 2 tbsp red food colouring too (in actuality it was burgundy gel since I ran out of red food colour). Mix the dough by alternating a portion of the flour mixture and ketchup mixture until they are both completely mixed in.
In hindsight, I should have used more food colouring to get a richer colour.
Preheat oven to 350 degree F. Portion out the batter into two 9 inch round cake pans.
Bake the cake for 30 minutes or until a toothpick comes out clean. Let it cool completely before icing.
For the icing, I asked my boyfriend what colour to make the icing and he said yellow. I asked him why and he said its the colour of mustard (-_-).
To make the icing, beat 3/4 cups of butter in a mixing bowl until smooth. Add 6 ounces of cream cheese. Blend until smooth. Add 1 tsp vanilla extract and 4 cups of icing sugar. For a less sweet icing, use 3 1/2 cup of icing sugar. Add a couple drops of yellow food colouring.
Carefully ice the cake with your (mustard) icing. For a bit of extra glam, I sprinkled some yellow sugar sprinkles. The served the cake to my family during Chinese New Years. I didn’t tell them what flavour it was at first and they assumed it was mango because of the icing. They couldn’t guess the flavour when they ate it and liked the taste. It reminded me of a light spice cake and was slightly salty. Overall it was not a terrible cake and I would make it again. Try it for yourself and see if you like it.
