Banana Bread

Banana tend to ripen pretty fast in the summer and I don’t like my bananas brown. I often use the brown bananas for smoothies or use them for baking. My favourite recipe would have to be banana bread from the cookbook Company’s Coming.

Start the recipe by preheating the oven to 350 degrees. In a bowl melt 1/2 cup butter until it is just soft.  Blend in 1 cup of white sugar and beat until it is well incorporated.

Add 2 eggs and beat in the sugar and butter mixture.

Blend until it is light yellow and creamy.

Add 3 mashed bananas to the mixture.

In a separate bowl, portion out 2 cups of flour, 1 tsp of baking soda and 1/2 tsp of baking powder. Add 1/2 tsp of salt. This will help bring out the different flavours.

Stir the dry ingredients until they are incorporated and set aside.  For some added texture and flavours, add some walnuts and chocolate chips. I added both white and dark chocolate chips. Give the batter a stir to get these mixed in.

Slowly add the dry ingredients to the batter. You want to only mix enough just to get all the flour mixed in. Too much mixing will cause the batter to be very stiff and chewy.

Pour the batter into a greased loaf pan and place it in a preheated oven.

Let the banana bread bake for about 1 hour and 10 minutes. The outside of the loaf should be a nice dark brown. To test if it is done, do a knife test by sticking in a butter knife into the loaf. If the knife comes out clean, it is ready!!  Let the banana bread cool down a little bit before removing from the loaf pan. Serve hot!! The chocolate chips will be nice and melted. Yum!!

Company’s Coming Banana Bread

Ingredients

  • 1/2 cup butter or margarine, softened.
  • 1 Cup Granulated Sugar
  • 2 Eggs
  • 3 Mashed ripe bananas
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup walnuts (optional)
  • 1 cup chocolate chips (optional)

Method

Cream butter and sugar together. Add eggs, one at a time, beating until smooth. Blend in mashed bananas.  

In second bowl, stir flour with baking soda, baking powder, salt and nuts. Add to banana mixture stirring only to moisten. Transfer to greased loaf pan. Bake in 350 degree oven for about 1 hour, or until a toothpick inserted in the center comes out clean. Let stand 10 minutes. Remove from pan and place on cake rack to cool. Wrap to store.
