It was Thursday night and I was in desperate need of making something quick and easy on Friday morning. I knew I wanted to make cookies and snicker doodles were out of the question. While I was searching the internet for something I could whip up I stumbled upon a three ingredient cookie. I thought to myself. NO WAY, and it is made with Nutella, flour and eggs … Nutella??? This is too good to be true. Then I found a four ingredient version! Nutella, flour, eggs and chocolate chips. YUM. I had to try it. These cookies were so good, everyone asked for the recipe. They were chewy and chocolatey and oh so addicting.
This recipe is definitely a lazy recipe. All you need to do is mix all the ingredients together. Roll it into balls and pop into the oven for 10 minutes. Voila done!Then I realized one of my friends who was going to eat the cookies was gluten intolerant so I decided to improvise. Start with Nutella and mix in egg.
Before adding the flour, scoop this mixture on a cookie tray and top with chocolate chips. I made about 5 cookies. Bake for about 10-15 minutes. You will know they are done when the centers start bubbling. These cookies spread quite a bit so leave enough of a gap. I prayed that these cookies worked. The first time I took these cookies out. They were not cooked and I could not remove them from the cookie sheet. I had to bake them for about another 5 minutes. This is what they looked like. Not the prettiest things but they worked. They were chewy, almost like brownies. However they were very thin.
Baking for people with gluten intolerance takes a little effort and knowledge. If the person that you are baking for is highly sensitive, just using the baking sheets you have can cause them to have a reaction. You can’t even bake the cookies in the same oven as other cookies with flour in them. Bleaching your equipment doesn’t even help, you just have to buy new stuff. So it is ok if you do not make anything for your gluten intolerant friends. They will understand. Luckily my friend is not that sensitive.
Using a cookie scoop, scoop out the dough. Press them down lightly. If you don’t have a scoop, use a teaspoon to portion the dough and roll them into balls.

one batch makes about 23 cookies
- 1 cup Nutella
- 1 egg
- 1/2 cup + 2 Tablespoons flour
- 1/2 cup Semi-sweet Chocolate Chips
Preheat the oven to 350F.
In a large mixing bowl, combine the Nutella, flour and egg. ( You can skip the flour to make flourless cookies as well, but it is better to replace with gluten free flour) Mix well, then add the chocolate chips. With a cookie scoop, place onto cookie sheets and bake for about 10 minutes. If you do not have a cookie scoop you can use a teaspoon and roll batter into balls. Cool the cookies for about 3-4 minutes before you transfer them onto a cooling rack to cool completely.
